Our Story

A small roaster on the edge of the Salish Sea.

Ember & Oak began in a drafty garage two blocks from the Bellingham waterfront, with a secondhand 5-kilo drum roaster and a stubborn belief that great coffee doesn't need to be complicated — it needs to be paid attention to.

Seven years later we're still small on purpose. We roast in batches no bigger than fifteen pounds so we can taste our way through every profile, and we buy our green coffee from a short list of importers and farms we've come to trust by name. When a lot is gone, it's gone. We'd rather rotate our menu with the seasons than roast the same thing all year.

Everything leaves our roastery whole-bean, stamped with its roast date, and headed out the door within two days. Grind it fresh, and it'll taste like we made it for you — because, in a way, we did.

How We Roast

Three principles, one small drum.

Sourced by the sip

We cup every green coffee before we commit, and buy only lots we'd be proud to pour for a friend. Traceable to the farm or co-op, paid for fairly, and rotated with the harvest.

Roasted in small batches

Fifteen pounds at a time on a 5-kilo drum, roasted by ear and by eye. Each profile is dialed in over dozens of test roasts until the sweetness lands exactly where we want it.

Shipped stupidly fresh

Beans rest for a day, then ship. Nothing sits on a shelf. Every bag is stamped with its roast date so you always know precisely how young your coffee is.
